Not all noodle soups in Vietnam are beef or chicken. This aromatic fish noodle soup is flavoured with plenty of turmeric which also gives it that almost iridescent yellow colour.
Ms Giao’s recipe hails from An Giang province in the Mekong Delta approx. 240km west of Saigon bordering Cambodia.
This dish is very similar to Bún Nước Lèo, a noodle soup loved by Khmer Krom of the Delta with its origins in Cambodia.
Ms Giao’s Bún Cá can be found down the end of the “Cambodian Market” (AKA Hồ Thị Kỷ “Foodie Street” in District 10, right by the school.
